Veggie Pizza, soooo good!

I did some grocery shopping today and picked up more veggies than I usually do, since I am trying to gradually replace meat dishes with vegetarian dishes. I looked up a few recipes and made a plan for the week's cooking.
This evening I made a veggie pizza with spinach, tomatoes, vidalia onions, and loads of garlic...
Garlic, and lots of it, is a key ingredient in lots of things that I make!

This pizza was sauce-less. I used olive oil, basil and parmesan (pesto) as the base, and piled it high with fresh spinach, veggies, a few sliced jalapenos, and crumbled feta cheese. It came out garlicky, cheesy, and delicious!


Suggestions for quick, easy, and cheap vegetarian meals?

  1. not quick, but definitely easy and cheap (ans sized to share):
    casserole dish: 1/2 cup lentils, 1 cup brown rice, 1/2 cup pearled barley, 1 (peeled, cubed) sweet potato.
    Cover with some veggie stock and that amazing boxed "roasted red pepper/tomato" soup.
    Cover and Bake @ 350 for about an hour and a half; in the last 8 minutes or so, stir in some savory and black pepper.

  3. Vegetarian spaghetti! it's REALLY good! Use ragu no meat sauce as much as you want, whole wheat noodles, and lots of zucchini, tomatoes, broccoli and dried cherries are really good in it!

  4. @jeska hugs I have been doing a vegetarian spaghetti for years now. I always add zucchini, broccoli and edamame. The dried cherries sound a little weird, but I have been discovering some interesting flavor combos in my no-meat explorations!
